  • 2 large eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh herbs (optional, e.g., thyme or dill)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a tart pan with the pastry dough and trim excess.
  2. Blanch asparagus in boiling water for 2 minutes until bright green, then shock in ice water.
  3. In a mixing bowl, whisk together goat cheese, heavy cream, eggs, salt, pepper, and optional herbs until smooth.
  4. Arrange the blanched asparagus over the pastry shell and pour the filling mixture on top.
  5. Bake for 30-35 minutes until golden brown and set; it should jiggle slightly when done.
