Instructions
- Gather and prepare all ingredients.
- In a bowl, mix olive oil, lime juice, cumin, chili powder, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
- Heat a skillet over medium heat. Cook marinated chicken for about 6–7 minutes per side until golden brown and fully cooked.
- In another bowl, combine corn, diced bell pepper, green onions, lime juice, and cilantro to create the corn salsa.
- Fluff cooked rice in serving bowls. Top with sliced chicken and generous amounts of corn salsa.
