Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup fresh corn kernels
  • 1 red bell pepper, diced
  • 4 green onions, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup cilantro, chopped
  • 2 cups cooked rice (white or brown)
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Gather and prepare all ingredients.
  2. In a bowl, mix olive oil, lime juice, cumin, chili powder, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
  3. Heat a skillet over medium heat. Cook marinated chicken for about 6–7 minutes per side until golden brown and fully cooked.
  4. In another bowl, combine corn, diced bell pepper, green onions, lime juice, and cilantro to create the corn salsa.
  5. Fluff cooked rice in serving bowls. Top with sliced chicken and generous amounts of corn salsa.
  6. Garnish with extra cilantro if desired and serve immediately.
