Description

This zesty cilantro lime rice is a vibrant, flavorful side dish that elevates any meal with its fresh ingredients and aromatic herbs.

Ingredients

Scale
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1/4 cup freshly squeezed lime juice
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste
  • Optional: 2 green onions, chopped

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the rinsed rice and pour in vegetable broth. Bring to a gentle boil while stirring occasionally.
  4. Once boiling, reduce heat to low and mix in lime juice and chopped cilantro. Cover tightly with a lid.
  5. Let simmer on low heat for about 18-20 minutes until liquid is absorbed; avoid lifting the lid too soon.
  6. Remove from heat and let rest for an additional 5 minutes before fluffing with a fork.

Notes

  • For added texture, consider mixing in diced bell peppers or black beans.
  • Store leftovers in an airtight container in the fridge and reheat with a splash of water to maintain moisture.
