Ingredients
Scale
- 1 cup long-grain rice
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 1/4 cup freshly squeezed lime juice
- 1/2 cup fresh cilantro, chopped
- Salt to taste
- Optional: 2 green onions, chopped
Instructions
- Rinse the rice under cold water until clear to remove excess starch.
- In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the rinsed rice and pour in vegetable broth. Bring to a gentle boil while stirring occasionally.
- Once boiling, reduce heat to low and mix in lime juice and chopped cilantro. Cover tightly with a lid.
- Let simmer on low heat for about 18-20 minutes until liquid is absorbed; avoid lifting the lid too soon.
- Remove from heat and let rest for an additional 5 minutes before fluffing with a fork.
Notes
- For added texture, consider mixing in diced bell peppers or black beans.
- Store leftovers in an airtight container in the fridge and reheat with a splash of water to maintain moisture.
