- 1 lb large shrimp, peeled and deveined
- 2 fresh limes (juiced and zested)
- 3 cloves garlic, minced
- 2 tsp chili powder
- 2 tbsp olive oil
- ¼ cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Rinse shrimp under cold water and pat dry with paper towels.
- In a bowl, combine olive oil, lime juice, lime zest, chili powder, minced garlic, salt, and pepper. Add shrimp and toss to coat well. Let marinate for 15 minutes.
- Heat a skillet over medium-high heat. Add marinated shrimp in a single layer and cook for 2-3 minutes on each side until they turn pinkish-orange and opaque.
- Remove from heat and toss with chopped cilantro and additional lime juice if desired.
- Serve immediately with rice or fresh vegetables.
