Ingredients

  • 1 cup fresh blackberries
  • 2 large fresh lemons (zest and juice)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine melted butter, flour, sugar, and a pinch of salt until crumbly. Press this mixture into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes, until lightly golden.
  4. In another bowl, whisk together eggs, sugar, lemon juice, lemon zest, flour, and baking powder until smooth.
  5. Gently fold in the blackberries and pour the mixture over the baked crust.
  6. Bake for an additional 25-30 minutes until set but slightly jiggly in the center.
