Ingredients

  • 1 cup orzo pasta
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1 small red onion, cut into wedges
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the orzo in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  2. Preheat the grill to medium-high heat. Toss zucchini, bell peppers, cherry tomatoes, and red onion in olive oil, salt, and pepper. Grill for about 5-7 minutes until tender and charred.
  3. In a large mixing bowl, combine the cooked orzo with the grilled vegetables. Squeeze fresh lemon juice over the mixture and add chopped basil and parsley.
  4. Toss everything together gently and adjust seasoning as needed before serving warm or chilled.
