- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 cup green beans, trimmed and cut
- 2 cups fresh spinach or kale
- 1 tsp dried basil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables into bite-sized pieces.
- In a large pot over medium heat, add a drizzle of olive oil. Sauté chopped onions and garlic until golden brown (about 3-5 minutes).
- Stir in carrots, celery, diced tomatoes (with juices), and green beans until combined.
- Add vegetable broth along with salt, pepper, basil, and thyme. Stir well.
- Bring the mixture to a boil; reduce heat to low and simmer uncovered for 20-30 minutes until veggies are tender.
- Stir in spinach or kale just before serving. Ladle into bowls and enjoy!
