Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup green beans, trimmed and cut
  • 2 cups fresh spinach or kale
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add a drizzle of olive oil. Sauté chopped onions and garlic until golden brown (about 3-5 minutes).
