Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 1 medium zucchini, sliced
  • 2 cups fresh spinach
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp Italian seasoning
  • 1 cup small pasta shells
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the diced onion until translucent.
  2. Add minced garlic, carrots, and zucchini; cook until tender.
  3. Stir in diced tomatoes and vegetable broth; let it simmer gently.
  4. Add pasta shells and cook according to package instructions until al dente.
  5. Just before serving, stir in mozzarella cheese until melted and gooey.
