  • 2 tbsp curry powder
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup vegetable broth (low sodium)
  • 1 medium onion, diced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent and golden brown.
  2. Add minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
  3. Stir in mixed vegetables with a pinch of salt and pepper; sauté for approximately 5 minutes until starting to soften.
  4. Pour in coconut milk and vegetable broth, stirring to combine.
  5. Add curry powder, adjusting for desired spice level. Bring to a simmer and reduce heat slightly while stirring occasionally.
