- Juice of 1 lime
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent and golden brown.
- Add minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
- Stir in mixed vegetables with a pinch of salt and pepper; sauté for approximately 5 minutes until starting to soften.

- Add curry powder, adjusting for desired spice level. Bring to a simmer and reduce heat slightly while stirring occasionally.
- Once veggies are tender (10-15 minutes), remove from heat and squeeze fresh lime juice over the top. Give it one last stir before serving.
