Ingredients

  • 24 ladyfingers (approx. 7 oz)
  • 1 cup freshly brewed espresso or strong coffee
  • 1 cup mascarpone cheese
  • ½ cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
  • 3 large eggs (separated)

Instructions

  1. Brew the espresso or strong coffee and let it cool.
  2. In a mixing bowl, whisk egg yolks and sugar until pale and creamy (about 5 minutes).
  3. Gently fold in mascarpone cheese until smooth.
  4. Quickly dip each ladyfinger into the cooled coffee mixture and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining mascarpone.
  6. Cover with plastic wrap and refrigerate for at least 4 hours (or overnight).
  7. Before serving, dust with cocoa powder.

Notes

  • Substitute sponge cake if you can’t find ladyfingers.
  • For a unique flavor twist, try flavored coffee or add a pinch of cinnamon.
