- 24 ladyfingers (approx. 7 oz)
- 1 cup freshly brewed espresso or strong coffee
- 1 cup mascarpone cheese
- ½ cup granulated sugar
- 2 tbsp unsweetened cocoa powder
- 1 tsp pure vanilla extract
- 3 large eggs (separated)
Instructions
- Brew the espresso or strong coffee and let it cool.
- In a mixing bowl, whisk egg yolks and sugar until pale and creamy (about 5 minutes).
- Gently fold in mascarpone cheese until smooth.
- Quickly dip each ladyfinger into the cooled coffee mixture and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining mascarpone.
- Cover with plastic wrap and refrigerate for at least 4 hours (or overnight).
- Before serving, dust with cocoa powder.
Notes
- Substitute sponge cake if you can’t find ladyfingers.
- For a unique flavor twist, try flavored coffee or add a pinch of cinnamon.
