- 1 lb lean ground turkey
- 2 tbsp taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- 1/2 cup sour cream or Greek yogurt
Instructions
- Preheat the oven to 400°F (200°C). Wash and pierce each sweet potato several times with a fork.
- Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 45–60 minutes until tender.
- In a skillet over medium heat, cook the ground turkey until browned (about 5–7 minutes). Add taco seasoning, black beans, and corn; stir until heated through.
- Once sweet potatoes are cool enough to handle, cut them open lengthwise and slightly mash the insides. Spoon the taco filling into each potato.
- Top with shredded cheese and return to the oven for an additional 5–10 minutes until cheese is melted. Serve with cilantro, avocado slices, and sour cream or Greek yogurt.
