  • 4 medium sweet potatoes (about 2 lbs)
  • 1 lb lean ground turkey
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1/2 cup sour cream or Greek yogurt

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce each sweet potato several times with a fork.
  2. Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 45–60 minutes until tender.
  3. In a skillet over medium heat, cook the ground turkey until browned (about 5–7 minutes). Add taco seasoning, black beans, and corn; stir until heated through.
  4. Once sweet potatoes are cool enough to handle, cut them open lengthwise and slightly mash the insides. Spoon the taco filling into each potato.
  5. Top with shredded cheese and return to the oven for an additional 5–10 minutes until cheese is melted. Serve with cilantro, avocado slices, and sour cream or Greek yogurt.
