Ingredients

  • 1 lb ground turkey (lean)
  • 2 tbsp taco seasoning
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, diced
  • 1 cup shredded cheddar cheese
  • 1 cup tomato sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • ¼ cup fresh cilantro, chopped
  • Sour cream (optional)

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente. Drain, reserving some pasta water.
  2. In a large skillet, heat olive oil over medium heat. Sauté the onions and bell peppers until softened, about 5-7 minutes.
  3. Add the ground turkey to the skillet and cook until browned, breaking it into small pieces.
  4. Stir in taco seasoning and tomato sauce; let simmer for about 5 minutes.
  5. Fold in cooked pasta and black beans, adding reserved pasta water for desired creaminess.
  6. Top with shredded cheddar cheese; cover briefly until melted.
  7. Garnish with fresh cilantro and serve with a dollop of sour cream if desired.
