- 1 can (15 oz) black beans, rinsed and drained
- ¼ cup fresh cilantro, chopped

Instructions
- Cook the rotini pasta in boiling salted water until al dente. Drain, reserving some pasta water.
- In a large skillet, heat olive oil over medium heat. Sauté the onions and bell peppers until softened, about 5-7 minutes.
- Add the ground turkey to the skillet and cook until browned, breaking it into small pieces.
- Stir in taco seasoning and tomato sauce; let simmer for about 5 minutes.
- Fold in cooked pasta and black beans, adding reserved pasta water for desired creaminess.
- Top with shredded cheddar cheese; cover briefly until melted.
- Garnish with fresh cilantro and serve with a dollop of sour cream if desired.
