Instructions
- Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes into bite-sized pieces.
- In a large skillet over medium heat, add olive oil and chopped onions. Sauté until onions are translucent (about 5 minutes), then add minced garlic.
- Stir in diced red bell pepper and cumin powder; cook until fragrant.
- Spread cubed sweet potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil, season with salt, and roast for 20-25 minutes or until tender.
- Combine roasted sweet potatoes with the sautéed mixture and black beans in the skillet. Heat through.
