- 12 large pasta shells
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach (chopped)
- 2 tsp Italian seasoning
- 2 cups marinara sauce
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a large baking dish with nonstick spray.
- In a bowl, mix ricotta, half of the mozzarella, Parmesan, spinach, Italian seasoning, salt, and pepper until well combined.
- Generously fill each pasta shell with the cheese mixture.
- Spread half of the marinara sauce on the bottom of the baking dish and arrange the filled shells in a single layer on top.
- Pour the remaining marinara sauce over the shells, sprinkle with remaining mozzarella, and drizzle with olive oil.
- Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
Notes
- Substitute cottage cheese for a lighter filling option or add mushrooms for extra flavor.
- Prepare shells a day ahead and store in the fridge before baking for convenience.
