  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced
  • 1 cup bell peppers (mixed colors), diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • Fresh parsley for garnish

Instructions

  1. Prep your ingredients by chopping the onions and bell peppers, and mincing the garlic.
  2. In a large skillet over medium heat, heat olive oil. Sauté onions and bell peppers until soft, about 5 minutes.
  3. Add minced garlic and sliced sausage; cook until sausage is browned.
  4. Stir in shrimp; cook until they turn pink, about 3-4 minutes.
  5. Add Cajun seasoning and chicken broth; simmer for another 5 minutes.
  6. Garnish with fresh parsley and serve hot.
