- 2 large eggs
- 1 cup freshly grated Parmesan cheese
- 1 tsp freshly cracked black pepper
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- ¼ cup fresh parsley, chopped (optional)
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente, about 8–10 minutes. Reserve ½ cup of pasta water before draining.
- In a skillet over medium heat, warm olive oil and sauté minced garlic until fragrant (about 1–2 minutes).
- In a bowl, whisk together eggs and Parmesan cheese until smooth.
- Add hot spaghetti to the skillet with garlic off the heat. Quickly stir in the egg mixture, adding reserved pasta water gradually until creamy.
- Season generously with black pepper and mix in chopped parsley if desired.
- Serve immediately while warm and enjoy!
