Ingredients

  • 2 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • ¼ cup fresh parsley, chopped (optional)

Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente, about 8–10 minutes. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, warm olive oil and sauté minced garlic until fragrant (about 1–2 minutes).
  3. In a bowl, whisk together eggs and Parmesan cheese until smooth.
  4. Add hot spaghetti to the skillet with garlic off the heat. Quickly stir in the egg mixture, adding reserved pasta water gradually until creamy.
  5. Season generously with black pepper and mix in chopped parsley if desired.
