Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tsp mixed herbs (thyme and rosemary)
  • 1 tsp black pepper
  • 1 large onion, sliced
  • 2 carrots, chopped
  • 1 bell pepper, chopped

Instructions

  1. Heat olive oil in a skillet over medium-high heat and sear chicken breasts for about 4 minutes on each side until golden brown.
  2. Layer sliced onions at the bottom of the slow cooker. Place seared chicken on top.
  3. Add minced garlic, carrots, and bell pepper around the chicken.
  4. Pour low-sodium chicken broth over the ingredients and sprinkle with mixed herbs and black pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken in the pot with two forks or serve whole with veggies.
