Ingredients

  • 9 lasagna noodles (no-boil)
  • 1 lb mixed seafood (shrimp, scallops, fish)
  • 15 oz ricotta cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 cups cream sauce (Alfredo or Bechamel)
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil for sautéing

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant, then add mixed seafood and cook for about 4-5 minutes until just cooked through.
  3. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  4. In a bowl, whisk together ricotta cheese and Italian seasoning until smooth.
  5. Begin layering in the baking dish: start with cream sauce at the bottom, followed by noodles, half of the ricotta mixture, and half of the seafood-spinach blend. Repeat layers until all ingredients are used.
  6. Top with remaining noodles, cream sauce, and sprinkle with Parmesan cheese.
  7. Bake uncovered for 30-35 minutes until bubbly and golden brown on top. Allow to cool slightly before serving.
