- 9 lasagna noodles (no-boil)
- 1 lb mixed seafood (shrimp, scallops, fish)
- 15 oz ricotta cheese
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 cups cream sauce (Alfredo or Bechamel)
- 2 tsp Italian seasoning
- 2 tbsp olive oil for sautéing
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant, then add mixed seafood and cook for about 4-5 minutes until just cooked through.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- In a bowl, whisk together ricotta cheese and Italian seasoning until smooth.
- Begin layering in the baking dish: start with cream sauce at the bottom, followed by noodles, half of the ricotta mixture, and half of the seafood-spinach blend. Repeat layers until all ingredients are used.
- Top with remaining noodles, cream sauce, and sprinkle with Parmesan cheese.
- Bake uncovered for 30-35 minutes until bubbly and golden brown on top. Allow to cool slightly before serving.
Notes
- For added flavor, consider using different herbs or spices like dill or Old Bay seasoning.
- Letting the lasagna sit for a few minutes after baking makes slicing easier.
