Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 cup plain yogurt
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp curry powder
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Prepare the ingredients by chopping onions and mincing garlic and ginger.
  2. Heat oil in a large pan over medium heat. Sauté onions until golden brown.
  3. Add minced garlic and ginger; cook for 1-2 minutes until aromatic.
  4. Brown the chicken thighs on all sides, about 5-7 minutes.
  5. Stir in yogurt, curry powder, salt, and pepper; cook for another 3 minutes.
  6. Pour in coconut milk, mix well, and bring to a gentle simmer. Reduce heat to low and cook for 15-20 minutes until thickened.
  7. Garnish with fresh cilantro before serving.
