- 1 lb boneless chicken thighs
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 2 cups chicken broth
- 1/4 cup fresh cilantro, chopped (plus more for garnish)
- 2 limes, juiced
- 8 corn tortillas
Instructions
- In a large pot over medium heat, add oil and sauté the chopped onion until translucent. Add minced garlic and cook until golden.
- Stir in the boneless chicken thighs and chipotle peppers; mix well.
- Pour in enough chicken broth to fully cover the chicken. Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes.
- Remove the chicken from the pot and shred it using two forks.
- While shredding, warm corn tortillas on a skillet until soft.
- Assemble tacos by placing shredded chicken in each tortilla; add fresh cilantro and squeeze lime juice before folding.
