Ingredients

  • 1 lb boneless chicken thighs
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)
  • 2 limes, juiced
  • 8 corn tortillas

Instructions

  1. In a large pot over medium heat, add oil and sauté the chopped onion until translucent. Add minced garlic and cook until golden.
  2. Stir in the boneless chicken thighs and chipotle peppers; mix well.
  3. Pour in enough chicken broth to fully cover the chicken. Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes.
  4. Remove the chicken from the pot and shred it using two forks.
  5. While shredding, warm corn tortillas on a skillet until soft.
  6. Assemble tacos by placing shredded chicken in each tortilla; add fresh cilantro and squeeze lime juice before folding.
