Ingredients
Scale
- 4 boneless skinless chicken breasts (about 680g)
- 1 cup salsa verde (fresh or jarred, about 240g)
- 2 tsp olive oil (10ml)
- 4 garlic cloves, minced
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts generously with salt and pepper.
- In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about one minute.
- Pour in the salsa verde and stir; let simmer for a few minutes.
- Add the seasoned chicken breasts to the skillet, coating them thoroughly with the sauce.
- Transfer everything to a baking dish if your skillet isn’t oven-safe, and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
Notes
- For added flavor, consider marinating the chicken in lime juice and salsa verde before cooking.
- You can substitute chicken with turkey or include beans and corn for a heartier meal.
