- 2 cups fresh spinach (washed)
- 200g paneer cheese (cubed)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1-inch piece of ginger (grated)
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- ½ cup cream or full-fat yogurt
- Juice of ½ lemon
- 2 tbsp cooking oil
- Salt to taste
Instructions
- Heat oil in a large pan over medium heat. Add chopped onions and cook until golden brown, about 5-7 minutes.
- Stir in minced garlic and grated ginger; sauté for another 1-2 minutes until fragrant.
- Add cumin seeds, turmeric, and garam masala. Cook briefly until aromatic, about 30 seconds.
- Gradually add spinach and stir continuously until wilted, about 3-4 minutes.
- Transfer the mixture to a blender and blend until smooth yet slightly chunky for texture.
- Return the blended mixture to the pan over low heat. Gently fold in cubed paneer and cream or yogurt. Heat through for about 5 minutes.
- Squeeze fresh lemon juice over the dish just before serving to enhance flavors.
Notes
- For a vegan version, substitute paneer with tofu.
