Ingredients

  • 2 cups fresh spinach (washed)
  • 200g paneer cheese (cubed)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1-inch piece of ginger (grated)
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • ½ cup cream or full-fat yogurt
  • Juice of ½ lemon
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. Heat oil in a large pan over medium heat. Add chopped onions and cook until golden brown, about 5-7 minutes.
  2. Stir in minced garlic and grated ginger; sauté for another 1-2 minutes until fragrant.
  3. Add cumin seeds, turmeric, and garam masala. Cook briefly until aromatic, about 30 seconds.
  4. Gradually add spinach and stir continuously until wilted, about 3-4 minutes.
  5. Transfer the mixture to a blender and blend until smooth yet slightly chunky for texture.
  6. Return the blended mixture to the pan over low heat. Gently fold in cubed paneer and cream or yogurt. Heat through for about 5 minutes.
  7. Squeeze fresh lemon juice over the dish just before serving to enhance flavors.

Notes

  •  For a vegan version, substitute paneer with tofu.
