Description

Experience the delightful contrast of sweet roasted sweet potato rounds topped with honey and feta, perfect for any gathering as a stunning appetizer or side dish.

Ingredients

Scale
  • 2 medium sweet potatoes (about 1.5 lbs), peeled and sliced into ½-inch rounds
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons honey
  • 4 ounces feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice sweet potatoes into even ½-inch thick rounds for consistent cooking.
  3. In a large bowl, toss the sliced sweet potatoes with olive oil until evenly coated.
  4. Drizzle honey over the potatoes, season with salt and pepper, and toss again to ensure even seasoning.
  5. Spread the seasoned rounds in a single layer on the prepared baking sheet and roast for 25-30 minutes, flipping halfway through until golden brown and tender.
  6. Remove from the oven and immediately sprinkle crumbled feta on top, allowing it to melt slightly before serving.

Notes

  • For a different flavor twist, substitute honey with maple syrup or add crushed red pepper flakes for a spicy kick.
  •  Ensure sweet potatoes are sliced evenly to guarantee consistent cooking results.
  • Store leftovers in an airtight container for up to three days; reheat in the oven at 350°F (175°C) for optimal crispiness.
