Description

Ingredients

  • 2 cups cooked short-grain rice
  • 1/4 cup fresh basil or cilantro, chopped
  • 1/2 cup finely chopped bell peppers or carrots
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp salt
  • 1 cup panko breadcrumbs
  • Oil for frying

Instructions

  1. In a large bowl, combine the cooked rice with the chopped herbs and vegetables until evenly mixed.
  2. Gently fold in the shredded cheese and salt.
  3. Wet your hands slightly to prevent sticking. Take small portions of the mixture and roll them into golf ball-sized balls.
  4. Roll each rice ball in panko breadcrumbs until fully coated.
  5. Heat oil in a frying pan over medium heat. Fry the rice balls until golden brown on all sides, about 5-7 minutes.
  6. Allow to cool slightly before serving warm with dipping sauces like soy sauce or marinara.
