- 1/2 cup finely chopped bell peppers or carrots
- 1/2 cup shredded mozzarella cheese
- 1/2 tsp salt
- 1 cup panko breadcrumbs
- Oil for frying
Instructions
- In a large bowl, combine the cooked rice with the chopped herbs and vegetables until evenly mixed.
- Gently fold in the shredded cheese and salt.
- Wet your hands slightly to prevent sticking. Take small portions of the mixture and roll them into golf ball-sized balls.
- Roll each rice ball in panko breadcrumbs until fully coated.
- Heat oil in a frying pan over medium heat. Fry the rice balls until golden brown on all sides, about 5-7 minutes.
- Allow to cool slightly before serving warm with dipping sauces like soy sauce or marinara.
