- 8 rice paper wrappers
- 1 cup butter lettuce leaves
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1 medium carrot, julienned
- 1 small cucumber, julienned
- 1 bell pepper, thinly sliced
- 1 ripe avocado, sliced
- Dipping sauce of choice (peanut or hoisin)
Instructions
- Wash and slice all vegetables and herbs.
- Soften each rice paper wrapper in warm water until pliable but not overly soft.
- Place a lettuce leaf in the center of each wrapper, followed by the veggies, avocado slices, and fresh herbs.
- Fold the sides over the filling and roll from bottom to top tightly yet gently.
- Serve chilled with your favorite dipping sauce.
