Description

Refreshing and vibrant, these summer rolls are packed with crisp vegetables and fresh herbs, making them the ideal light meal or appetizer for warm days.


Ingredients

  • 8 rice paper wrappers
  • 1 cup butter lettuce leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1 medium carrot, julienned
  • 1 small cucumber, julienned
  • 1 bell pepper, thinly sliced
  • 1 ripe avocado, sliced
  • Dipping sauce of choice (peanut or hoisin)

Instructions

  1. Wash and slice all vegetables and herbs.
  2. Soften each rice paper wrapper in warm water until pliable but not overly soft.
  3. Place a lettuce leaf in the center of each wrapper, followed by the veggies, avocado slices, and fresh herbs.
  4. Fold the sides over the filling and roll from bottom to top tightly yet gently.
  5. Serve chilled with your favorite dipping sauce.
