Description

This vibrant Pineapple Cucumber Salad combines the sweetness of fresh pineapple with crunchy cucumbers, tossed in zesty lime juice for a refreshing summer treat.

Ingredients

Scale
  • 2 cups fresh pineapple, diced
  • 1 cup cucumber, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon honey (optional)
  • Salt and pepper to taste

Instructions

  1. Wash the pineapple and cucumber thoroughly.
  2. Dice the pineapple into bite-sized chunks by removing the top, bottom, and outer skin.
  3. Trim and slice the cucumber into thin rounds or half-moons.
  4. In a large bowl, combine pineapple chunks, cucumber slices, red onion, and chopped cilantro.
  5. Drizzle freshly squeezed lime juice over the mixture; add honey if desired. Season with salt and pepper.
  6. Toss gently until all ingredients are evenly coated.
  7. Chill in the refrigerator for 15 minutes before serving to enhance flavors.

Notes

  • For added crunch, substitute cucumbers with zucchini or incorporate diced bell peppers.
  • Spice it up by adding jalapeños or a sprinkle of chili flakes.
  •  This salad is best enjoyed fresh; store leftovers in an airtight container for up to two days.
