Ingredients

- 1 cup fresh ginger, peeled and chopped
- 1 cup granulated sugar
- 2 cups filtered water
- 1/4 cup fresh lemon juice (about 2 lemons)
- 3 cups sparkling water
Instructions
- In a saucepan, combine chopped ginger, sugar, and filtered water. Heat over medium until the sugar dissolves.
- Simmer for 20 minutes until the mixture thickens slightly. Remove from heat and let cool.
- Strain the mixture into a bowl or jar to remove ginger pieces.
- Stir in fresh lemon juice into the cooled syrup.
- For serving, mix 1 part syrup with 3 parts sparkling water over ice.
- Garnish with lemon slices or mint leaves if desired.
