Ingredients

  • 1 cup fresh ginger, peeled and chopped
  • 1 cup granulated sugar
  • 2 cups filtered water
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 cups sparkling water

Instructions

  1. In a saucepan, combine chopped ginger, sugar, and filtered water. Heat over medium until the sugar dissolves.
  2. Simmer for 20 minutes until the mixture thickens slightly. Remove from heat and let cool.
  3. Strain the mixture into a bowl or jar to remove ginger pieces.
  4. Stir in fresh lemon juice into the cooled syrup.
  5. For serving, mix 1 part syrup with 3 parts sparkling water over ice.
  6. Garnish with lemon slices or mint leaves if desired.
