Description

Refreshing and light, these cucumber snacks are a guilt-free treat perfect for summer gatherings or a quick healthy bite anytime.


Ingredients

  • 2 medium fresh cucumbers
  • 4 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 10 cherry tomatoes, halved
  • Salt & pepper to taste

Instructions

  1. Wash and slice the cucumbers into half-inch rounds.
  2. Mix softened cream cheese, fresh dill, lemon juice, salt, and pepper in a bowl until smooth.
  3. Spoon or pipe the cream cheese mixture onto each cucumber slice.
  4. Top each slice with half a cherry tomato for added flavor and color.
