  • 3 large eggs
  • 1 cup sour cream (full-fat)
  • 1 ½ cups fresh strawberries, diced
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 cup heavy cream (chilled)
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with nonstick spray.
  2. In a bowl, mix the red velvet cake mix, eggs, sour cream, and melted butter until smooth and slightly thick.
  3. Divide the batter evenly between the prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean.
  4. For the cheesecake layer, beat softened cream cheese and granulated sugar in a separate bowl until creamy. Add vanilla extract and heavy cream; mix until fluffy.
