Ingredients
Scale
- 1 box red velvet cake mix
- 3 large eggs
- 1 cup sour cream (full-fat)
- 1 ½ cups fresh strawberries, diced
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 1 cup heavy cream (chilled)
- ½ cup unsalted butter (melted)
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with nonstick spray.
- In a bowl, mix the red velvet cake mix, eggs, sour cream, and melted butter until smooth and slightly thick.
- Divide the batter evenly between the prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean.
- For the cheesecake layer, beat softened cream cheese and granulated sugar in a separate bowl until creamy. Add vanilla extract and heavy cream; mix until fluffy.
- Gently fold in diced strawberries into the cheesecake mixture.
- Once cakes are completely cooled, place one layer on a serving plate. Spread half of the cheesecake mixture on top, add the second layer, then top with remaining cheesecake mixture and garnish with fresh strawberries.
Notes
- Substitute strawberries with raspberries or blueberries for a twist.
- For added decadence, consider mixing in chocolate chips with the cheesecake batter.
- Always use room temperature cream cheese to avoid lumps.
