  • 1 medium eggplant, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 ripe tomatoes, diced
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables: dice eggplant, slice zucchini and peppers, mince garlic, and chop onion.
  2. Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent (about 5 minutes), then stir in garlic until fragrant.
  3. Add diced eggplant and sliced peppers; cook for 7-10 minutes until softened.
  4. Mix in zucchini and diced tomatoes; stir to combine.
  5. Season with salt, pepper, thyme, and basil. Cover and simmer on low heat for 20-25 minutes until all vegetables are tender.
  6. Taste before serving; adjust seasoning if necessary. Serve warm or allow to cool before serving cold.
