- 1 medium eggplant, diced
- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced

- 3 tablespoons extra virgin olive oil
- 1 teaspoon fresh thyme, chopped

Instructions
- Wash and prepare all vegetables: dice eggplant, slice zucchini and peppers, mince garlic, and chop onion.
- Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent (about 5 minutes), then stir in garlic until fragrant.
- Add diced eggplant and sliced peppers; cook for 7-10 minutes until softened.
- Mix in zucchini and diced tomatoes; stir to combine.
- Season with salt, pepper, thyme, and basil. Cover and simmer on low heat for 20-25 minutes until all vegetables are tender.
- Taste before serving; adjust seasoning if necessary. Serve warm or allow to cool before serving cold.
