- 1 cup fresh raspberries
- 1 cup all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter (cold, cubed)
- 1 large egg (room temperature)
- 1 tsp baking powder
- 1 tsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, combine flour, sugar, and salt. Cut in the cold butter until crumbly.
- Beat the egg and mix it with the vanilla extract into the dry ingredients until just combined.
- Press about two-thirds of the mixture into the prepared baking dish to form the crust.
- In another bowl, gently mash the fresh raspberries and mix with sugar. Spread this filling over the crust.
- Sprinkle the remaining crumb mixture on top of the raspberries.
- Bake for 30-35 minutes or until golden brown. Let cool completely before cutting into squares.
