Ingredients

  • 1 cup fresh raspberries
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter (cold, cubed)
  • 1 large egg (room temperature)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, combine flour, sugar, and salt. Cut in the cold butter until crumbly.
  3. Beat the egg and mix it with the vanilla extract into the dry ingredients until just combined.
  4. Press about two-thirds of the mixture into the prepared baking dish to form the crust.
  5. In another bowl, gently mash the fresh raspberries and mix with sugar. Spread this filling over the crust.
  6. Sprinkle the remaining crumb mixture on top of the raspberries.
  7. Bake for 30-35 minutes or until golden brown. Let cool completely before cutting into squares.
