Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • Cooked rice or noodles for serving

Instructions

  1. Press the tofu between paper towels to remove excess moisture while chopping the vegetables.
  2. Heat sesame oil in a large skillet over medium heat. Add cubed tofu and sauté until golden brown on all sides (about 8 minutes).
  3. Add minced garlic, bell peppers, broccoli florets, and carrots. Sauté until veggies are tender yet crisp (around 5 minutes).
  4. Drizzle soy sauce over the stir fry and cook for another minute while stirring.
  5. Fold in sliced green onions just before serving.
  6. Serve hot over cooked rice or noodles.
