Ingredients

  • 2 green onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (bell peppers and carrots, chopped)

Instructions

  • Gather all ingredients and chop vegetables into bite-sized pieces.
  • Cook rice according to package instructions.
  • Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  • Increase heat slightly and add ground beef. Cook for 5-7 minutes, breaking apart until browned.
  • Stir in soy sauce and brown sugar; simmer for an additional 2-3 minutes until slightly thickened.
  • Add vegetables and stir-fry for 2-3 minutes until tender-crisp.
  • Serve the beef mixture over cooked rice and garnish with chopped green onions.
