Description

Cauliflower Fried Rice is a vibrant, low-carb dish that combines fluffy cauliflower grains and colorful veggies for a quick, healthy meal. Perfect for any occasion, it’s packed with flavor and nutrition.


Ingredients

  • 1 medium head cauliflower (about 4 cups riced)
  • 1 cup shredded carrots
  • 1 cup frozen green peas
  • 1 cup diced bell peppers (any color)
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 large eggs (optional)
  • 2 green onions, sliced

Instructions

  1. Rinse and remove leaves from the cauliflower. Cut into florets and pulse in a food processor until rice-sized (about 5-10 seconds).
  2. Heat sesame oil in a large skillet over medium heat. Add garlic and ginger; sauté until fragrant.
  3. Add shredded carrots, green peas, and bell peppers. Stir-fry for about 3-4 minutes until tender.
  4. Incorporate cauliflower rice and soy sauce. Cook together for an additional 5 minutes until heated through.
  5. If using eggs, push the mixture to one side of the skillet. Scramble the eggs on the empty side until cooked through, then mix everything together.
  6. Fold in sliced green onions just before serving.

Notes

  • Feel free to swap in your favorite vegetables or add cooked chicken or tofu for protein.
