- 1 medium head cauliflower (about 4 cups riced)
- 1 cup shredded carrots
- 1 cup frozen green peas
- 1 cup diced bell peppers (any color)
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 large eggs (optional)
- 2 green onions, sliced
Instructions
- Rinse and remove leaves from the cauliflower. Cut into florets and pulse in a food processor until rice-sized (about 5-10 seconds).
- Heat sesame oil in a large skillet over medium heat. Add garlic and ginger; sauté until fragrant.
- Add shredded carrots, green peas, and bell peppers. Stir-fry for about 3-4 minutes until tender.
- Incorporate cauliflower rice and soy sauce. Cook together for an additional 5 minutes until heated through.
- If using eggs, push the mixture to one side of the skillet. Scramble the eggs on the empty side until cooked through, then mix everything together.
- Fold in sliced green onions just before serving.
Notes
- Feel free to swap in your favorite vegetables or add cooked chicken or tofu for protein.
- Store leftovers in an airtight container in the fridge for up to three days or freeze for up to one month.
