  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Whipped cream (optional for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into the bottom of the prepared dish.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and mix until fluffy.
  4. Mix in pumpkin puree, eggs, vanilla extract, cinnamon, and nutmeg until well blended.
  5. Pour filling over the crust and bake for 25-30 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely at room temperature before refrigerating for at least two hours to firm up. Serve chilled or at room temperature with optional whipped cream.
