- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup pumpkin puree
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Whipped cream (optional for serving)
Instructions
- Preheat the oven to 350°F (175°C). Prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into the bottom of the prepared dish.
- In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and mix until fluffy.
- Mix in pumpkin puree, eggs, vanilla extract, cinnamon, and nutmeg until well blended.
- Pour filling over the crust and bake for 25-30 minutes until set but slightly jiggly in the center.
- Allow to cool completely at room temperature before refrigerating for at least two hours to firm up. Serve chilled or at room temperature with optional whipped cream.
Notes
- For a lighter version, substitute cream cheese with Greek yogurt.
