Description

Savor the creamy goodness of avocado toast topped with a perfectly poached egg—an irresistible dish for breakfast or brunch that combines flavor and nutrition.

Ingredients

Scale
  • 2 ripe avocados
  • 2 large fresh eggs
  • 4 slices sourdough or whole grain bread
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • Red pepper flakes (optional)

Instructions

  1. Toast the bread until golden brown.
  2. In a saucepan, bring water to a gentle simmer. Crack eggs into separate bowls and slide them into the water, cooking for 3-4 minutes until whites are set.
  3. While the eggs poach, cut avocados in half, remove pits, and scoop flesh into a bowl. Mash with lemon juice, salt, and pepper.
  4. Spread the mashed avocado generously over toasted bread.
  5. Use a slotted spoon to place poached eggs on top of each avocado toast. Sprinkle with red pepper flakes if desired.
  6. Serve immediately while warm.

Notes

  • Customize your toast by adding toppings like cherry tomatoes or feta cheese for extra flavor.
  •  Store leftover avocado mash in an airtight container with lemon juice to keep it fresh.
