Ingredients

  • 2 ripe bananas, mashed
  • 1 cup Nutella
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs, room temperature
  • ½ cup whole milk (or milk alternative)
  • ½ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with nonstick spray.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together sugar, eggs, and milk until combined. Stir in melted butter and half of the Nutella until well mixed.
  4. In a separate bowl, mix flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined; do not overmix.
  5. Spoon batter into muffin cups until they are two-thirds full. Drop spoonfuls of the remaining Nutella on top and swirl gently with a toothpick.
  6. Bake for 18–20 minutes or until golden brown and a toothpick inserted comes out clean. Let cool slightly before serving.
