- 8 oz fresh mushrooms (cremini and button), sliced
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium vegetable broth
- 1 cup sour cream (or Greek yogurt)
- 8 oz egg noodles or your choice of pasta
- 2 tbsp olive oil or butter
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Clean and slice the mushrooms. Chop the onion and mince the garlic.
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet over medium heat, add olive oil or butter. Sauté onions until translucent, then add garlic and mushrooms; cook until browned.
- Stir in smoked paprika, salt, and pepper; mix well.
- Pour in vegetable broth and scrape up any brown bits from the skillet. Simmer for about 5 minutes until slightly thickened.
- Reduce heat to low, then stir in sour cream until fully combined. Adjust seasoning as needed.
- Gently fold in cooked pasta until well coated. Serve hot, garnished with chopped parsley.

- For a vegan option, substitute sour cream with coconut cream.
- Try adding spinach or your favorite mushrooms for extra flavor.
