Description

Mushroom Stroganoff is a creamy, comforting dish featuring sautéed mushrooms enveloped in a rich sauce, ideal for any weeknight dinner.


Ingredients

  • 8 oz fresh mushrooms (cremini and button), sliced
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 cup sour cream (or Greek yogurt)
  • 8 oz egg noodles or your choice of pasta
  • 2 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Clean and slice the mushrooms. Chop the onion and mince the garlic.
  2. Cook pasta according to package instructions; drain and set aside.
  3. In a large skillet over medium heat, add olive oil or butter. Sauté onions until translucent, then add garlic and mushrooms; cook until browned.
  4. Stir in smoked paprika, salt, and pepper; mix well.
  5. Pour in vegetable broth and scrape up any brown bits from the skillet. Simmer for about 5 minutes until slightly thickened.
  6. Reduce heat to low, then stir in sour cream until fully combined. Adjust seasoning as needed.
  7. Gently fold in cooked pasta until well coated. Serve hot, garnished with chopped parsley.

Notes

  • For a vegan option, substitute sour cream with coconut cream.
