Instructions
- In a mixing bowl, combine flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs. Gradually add cold water until dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- In a bowl, combine mixed berries with sugar, cornstarch, and lemon juice; toss gently to coat.
- On a floured surface, roll out the chilled dough into a rough circle about 12 inches wide.
- Transfer rolled dough onto parchment paper on a baking sheet. Spoon berry filling into the center and fold edges over to create a rustic border.
- Brush with egg wash if desired for a golden finish.
- Bake in the preheated oven for about 35-40 minutes until bubbly and golden brown.
