Ingredients

- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp granulated sugar
- 1 cup whole milk (or almond/oat milk)
- 2 large eggs
- 2 tbsp unsalted butter, melted
- 2 cups mixed berries (fresh or frozen)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- In a large bowl, mix together the flour, baking powder, and sugar.
- In a separate bowl, whisk the milk, eggs, and melted butter until smooth.
- Combine the wet mixture into the dry ingredients and fold gently until just combined; some lumps are okay.
- Preheat a skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter per pancake onto the skillet and cook until bubbles form on top.
- For the compote, combine mixed berries, lemon juice, sugar, and cornstarch in a saucepan over medium heat. Stir until bubbling and thickened.
- Serve pancakes hot with warm mixed berry compote generously spooned over the top.
