- 1 cup chopped pecans
- 3/4 cup brown sugar
- 1/4 cup granulated sugar

- 1/4 cup unsalted butter (melted)
Instructions
- Preheat oven to 350°F (175°C) and place mini muffin tins on a baking sheet.
- In a bowl, whisk together eggs, brown sugar, granulated sugar, melted butter, salt, and vanilla until fully combined.
- Gently fold in chopped pecans until evenly coated in the mixture.
- Spoon the filling into each crust about three-quarters full to allow for puffing during baking.
- Bake for 20-25 minutes or until the filling is set and tops are golden brown.
- Cool in the pan before transferring to a wire rack. Serve warm or at room temperature.
