Description

  • 1 cup chopped pecans
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (melted)

Instructions

  1. Preheat oven to 350°F (175°C) and place mini muffin tins on a baking sheet.
  2. In a bowl, whisk together eggs, brown sugar, granulated sugar, melted butter, salt, and vanilla until fully combined.
  3. Gently fold in chopped pecans until evenly coated in the mixture.
  4. Spoon the filling into each crust about three-quarters full to allow for puffing during baking.
  5. Bake for 20-25 minutes or until the filling is set and tops are golden brown.
  6. Cool in the pan before transferring to a wire rack. Serve warm or at room temperature.
