  • 2 cups vegetable broth
  • 1 can (15 oz) diced tomatoes, drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ cup bell peppers, diced
  • ½ cup onions, diced
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. If desired, sauté the diced bell peppers and onions in a little oil until softened.
  3. In the rice cooker, combine rinsed rice, diced tomatoes, vegetable broth, cumin, chili powder, garlic powder, and sautéed veggies.
  4. Close the lid and set the rice cooker to cook mode. Let it cook for approximately 20-25 minutes.
  5. Once cooking is complete, let sit for 5 minutes before lifting the lid. Fluff with a fork and garnish with cilantro if using.
