Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- If desired, sauté the diced bell peppers and onions in a little oil until softened.
- In the rice cooker, combine rinsed rice, diced tomatoes, vegetable broth, cumin, chili powder, garlic powder, and sautéed veggies.
- Close the lid and set the rice cooker to cook mode. Let it cook for approximately 20-25 minutes.
- Once cooking is complete, let sit for 5 minutes before lifting the lid. Fluff with a fork and garnish with cilantro if using.
