Ingredients

Scale
  • 1 lb white fish fillets (cod or tilapia)
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika

  • 1 avocado, sliced
  • 1 cup pico de gallo

Instructions

  1. In a bowl, mix olive oil, lime juice, cilantro, cumin, and paprika to create the marinade.
  2. Place fish fillets in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat (375°F / 190°C).
  4. Grill the marinated fish for about 3-5 minutes per side until cooked through and flaky.
  5. Wrap corn tortillas in foil and place on a cooler part of the grill to warm them up.
  6. Flake the grilled fish into bite-sized pieces, layer onto warmed tortillas, and top with avocado slices and pico de gallo.

Notes

  •  For added texture, consider topping with shredded cabbage or sliced radishes.
  •  Swap white fish for shrimp or chicken for variety in protein options.
