Description

A healthy and flavorful dish featuring flaky cod fillets baked with cherry tomatoes and fresh herbs, perfect for weeknight dinners or entertaining guests.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a baking dish with olive oil.
  3. Place cod fillets in the center of the dish and surround them with cherry tomatoes.
  4. Drizzle olive oil over the entire dish. Season with minced garlic, oregano, salt, black pepper, and lemon juice.
  5. Bake for 20-25 minutes until the cod flakes easily with a fork.
  6. Garnish with fresh parsley before serving.
