- 1 lb ground beef (80/20)
- 1 cup seasoned breadcrumbs
- 2 large eggs
- 1 medium onion, finely chopped
- ½ cup ketchup (plus more for topping)
- 2 lbs Russet or Yukon Gold potatoes, peeled and cubed
- ¼ cup butter
- ½ cup cream
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine ground beef, breadcrumbs, sautéed onions, eggs, ketchup, garlic powder, salt, and pepper until just mixed.
- Transfer the mixture to the loaf pan and smooth the top. If desired, add extra ketchup on top.
- Bake for about 60 minutes or until the internal temperature reaches 160°F (70°C).
- While baking, boil the cubed potatoes in salted water until fork-tender (15-20 minutes). Drain well.
- Return potatoes to the pot; add butter and cream. Mash until creamy but slightly chunky. Season with salt and pepper.
- Allow meatloaf to rest before slicing and serve with mashed potatoes.
