Description

Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • ½ cup ketchup (plus more for topping)
  • 2 lbs Russet or Yukon Gold potatoes, peeled and cubed
  • ¼ cup butter
  • ½ cup cream
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine ground beef, breadcrumbs, sautéed onions, eggs, ketchup, garlic powder, salt, and pepper until just mixed.
  3. Transfer the mixture to the loaf pan and smooth the top. If desired, add extra ketchup on top.
  4. Bake for about 60 minutes or until the internal temperature reaches 160°F (70°C).
  5. While baking, boil the cubed potatoes in salted water until fork-tender (15-20 minutes). Drain well.
  6. Return potatoes to the pot; add butter and cream. Mash until creamy but slightly chunky. Season with salt and pepper.
  7. Allow meatloaf to rest before slicing and serve with mashed potatoes.
