- 3 pounds Yukon Gold or red potatoes
- 1 cup full-fat sour cream
- ½ cup mayonnaise
- 1 cup shredded sharp cheddar cheese
- ½ cup chopped green onions
- ½ cup turkey bacon bits or vegetarian bacon bits
- Salt and pepper to taste
- 1 tsp mustard powder (optional)
Instructions
- Wash the potatoes thoroughly and cut into bite-sized pieces.
- In a large pot, cover the chopped potatoes with cold water. Add salt and bring to a boil over medium-high heat. Cook until fork-tender, about 15-20 minutes.
- Drain the potatoes in a colander and let cool slightly.
- In a large bowl, mix sour cream, mayonnaise, and mustard powder (if using) until smooth. Add cooled potatoes and gently fold to combine.
- Stir in cheddar cheese, green onions, and bacon bits until evenly mixed.
- Season with salt and pepper to taste.
- Chill in the fridge for at least an hour before serving to enhance flavors.
