Description

A creamy and flavorful dish that combines tender potatoes with rich cheese and crispy toppings, perfect for picnics, potlucks, and gatherings.


Ingredients

  • 3 pounds Yukon Gold or red potatoes
  • 1 cup full-fat sour cream
  • ½ cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • ½ cup chopped green onions
  • ½ cup turkey bacon bits or vegetarian bacon bits
  • Salt and pepper to taste
  • 1 tsp mustard powder (optional)

Instructions

  1. Wash the potatoes thoroughly and cut into bite-sized pieces.
  2. In a large pot, cover the chopped potatoes with cold water. Add salt and bring to a boil over medium-high heat. Cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes in a colander and let cool slightly.
  4. In a large bowl, mix sour cream, mayonnaise, and mustard powder (if using) until smooth. Add cooled potatoes and gently fold to combine.
  5. Stir in cheddar cheese, green onions, and bacon bits until evenly mixed.
  6. Season with salt and pepper to taste.
  7. Chill in the fridge for at least an hour before serving to enhance flavors.
