  • 2 medium fresh lemons, juiced and zested
  • 4 cups vegetable broth
  • 2 medium carrots, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare ingredients by dicing onions and carrots; rinse and drain chickpeas.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent (3–4 minutes).
  3. Add diced carrots and oregano; cook until softened (about 5 minutes).

  5. Squeeze in lemon juice and zest; let simmer for an additional 10 minutes.
