Ingredients
Scale
- 4 boneless, skinless chicken breasts (680g)
- 2 fresh lemons (for juice, about 1/2 cup)
- 2 tsp freshly cracked black pepper
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp paprika
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Coat the chicken breasts in the mixture and marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and add a splash of olive oil. Sear the marinated chicken for 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and squeeze additional lemon juice over it while it rests.
- Preheat your oven to 400°F (200°C). Transfer the chicken to an oven-safe dish and bake for 15-20 minutes or until cooked through.
- Plate your Lemon Pepper Chicken with fresh parsley on top and serve alongside steamed vegetables or fluffy rice.
Notes
- For a zesty twist, substitute lemon juice with lime juice.
- Enhance flavors by adding fresh herbs like thyme or rosemary.
