- 9 lasagna noodles (no-boil or traditional)
- 1 cup ricotta cheese
- 1 ½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 2 cups marinara sauce
- 1 large egg
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and rinse under cold water.
- In a bowl, mix ricotta cheese, chopped spinach, half of the mozzarella, egg, Italian seasoning, salt, and pepper until well combined.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Lay each noodle flat, spoon filling along one end, and roll tightly. Place seam-side down in the dish.
- Pour remaining marinara sauce over the rolls and sprinkle with the rest of the mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
Notes
- Substitute ricotta with cottage cheese for a lighter option.
- Add other veggies like mushrooms or zucchini for added flavor.
