- 1.5 lbs baby potatoes
- 4 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 4 oz feta cheese, crumbled
- 2 tbsp fresh parsley or dill, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil baby potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool.
- Toss cooled potatoes with olive oil and minced garlic in a bowl until evenly coated.
- Place each potato on the baking sheet and gently smash them using the bottom of a glass or your palm.
- Drizzle additional olive oil over the smashed potatoes and season generously with salt and pepper.
- Bake for 20-25 minutes until golden brown and crispy.
- Remove from oven, sprinkle with crumbled feta cheese while still hot, then garnish with fresh herbs.
Notes
- For added flavor, experiment with different herbs like rosemary or thyme.
- To store leftovers, keep them in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C) until warm.
