Description

Ingredients

  • 1.5 lbs baby potatoes
  • 4 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 4 oz feta cheese, crumbled
  • 2 tbsp fresh parsley or dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil baby potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool.
  3. Toss cooled potatoes with olive oil and minced garlic in a bowl until evenly coated.
  4. Place each potato on the baking sheet and gently smash them using the bottom of a glass or your palm.
  5. Drizzle additional olive oil over the smashed potatoes and season generously with salt and pepper.
  6. Bake for 20-25 minutes until golden brown and crispy.
  7. Remove from oven, sprinkle with crumbled feta cheese while still hot, then garnish with fresh herbs.
